Entering MY Corn Salad Recipe in a contest

The recipe requirements:  Recipes must have a healthy twist. That means using healthier ingredients such as fresh or natural ingredients and recipes must include Frito-Lay product(s). They can be incorporated in many ways:

. In the recipes themselves, such as Frito-pies
. Tostitos-base in taco salads dishes/dip
. Tostitos scoops or various other Lays chips used for “dipping” the recipes

So here is my Corn Salad, I am actually quit known for making this for church functions, cookouts, and as an appetizer during the holiday's around my house, it is easy to make and fun to serve with Frito Scoops or Tostitos Scoops, as a salad or an appetizer.

Ingredients

2 12 ounce cans whole kernel corn, drained, or 3 cups fresh cooked corn
(optional) 1 large cucumber, peeled and diced
1 Small onion or 3 green onions, diced
2 small tomatoes, chopped
1/4 cup of DUKE's light mayonnaise
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 - 1/2 teaspoon Emrill's original seasoning
Lettuce leaves, Tomato, or Red Pepper cups
1 bag of Fritto Scoops or Tostito's Scoops

Now your guests have options, they can spoon the salad into a lettuce cup and eat it off a plate, or for the true sports fan at your party, spoon it into a Tomato or Red Pepper Cup and walk around scooping corn salad with their frito or tostito chips. YUM YUM have FUN!
